Sorbetto di Fragola
Ingredienti:
1500 g acqua
150 g base top50
1400 g fragola
790 g saccarosio
100 g pasta fragola
60 g destrosio
Procedimento:
Miscelare le fragole fresche con l’acqua.
A parte miscelare tutte le polveri e unire i due composti.
Frullare con mixer ad immersione fino a completo scioglimento di tutti gli zuccheri.
Mettere il prodotto in mantecatole e mantecare.

Strawberries Gelato
Ingredients:
150 gr Water
150 gr Top base: 50
1400 gr Stawberry
790 gr Sugar
100 gr Strawberry pure
60 gr Dextrose
Mix the fresh strawberries with the water. Mix the other ingredients and add to the strawberries mixture. Continue mixing with a blender till all the sugars have disolved. Put into the batch freezer and whisk.
